Head Baker Our uber-talented pastry team is led by Head Baker Gavin Rudd (formerly of Bam Bam Bakehouse and Paddock Bakery). Passionate about all things patisserie, you can find Gavin and his team serving up both the usual suspects along with more unique flavour combos on our delicious Baked menu.

PLB Group General Manager Bringing Baked to life is hospitality guru (and man of many talents) Mark Wilson - best known for acclaimed local restaurants Osteria in Casuarina, Taverna in Kingscliff, Bombay Cricketers Club in Salt, and most recently, our sister venue Ancora Weddings. With a passion for bringing loved ones together over memorable dining experiences, Mark is also community-driven with a strong focus on sourcing sustainable, local ingredients to showcase the best of our Northern Rivers produce.
